Ever since I first measured how much 1 cup of flour weighs in grams, I was shocked. I had to realize that basically all information you find online on how to convert flour from cups to grams and vice versa is wrong.
What you typically find is a 125-135 gram ratio for every US cup. Now get this! However, I measured one cup of all-purpose flour, and it was always around 150 grams. So whenever you want to calculate how much one cup of flour is, use 150 grams from now on.
Just to clarify a few things. Yes, I zeroed the scale with the measuring cup, weighing only the flour. No, I did not packed the flour tightly and leveled it off with the straight back of a knife. A regular, 240 ml US cup was used for measuring. I made five different measurements according to our measurement methodology, so the 150 grams for 1 cup of flour is an average.

Metric vs. Imperial Conversions
When working with flour in the kitchen, it's essential to be adept at converting between the metric and imperial systems of measurement. This skill ensures accuracy in following recipes from different culinary traditions around the world.
The metric system, commonly used around the world, measures flour primarily in grams and kilograms. This system is favored for its simplicity and ease of scaling.
Predominantly used in the United States, the imperial system measures flour in tablespoons and teaspoons. While not as straightforward as scaling, it is deeply integrated into many traditional American recipes.
Common Measurement Units for Flour
Flour can be measured by either volume or weight. Lightweight and tightly packed ingredients, such as flour, are best measured by weight (grams or kg), becase measuring them by volume is pretty unreliable.
Most typical volume measurements for flour are:
- Teaspoons (tsp)
- Tablespoons (tbsp)
- Cups
Most typical weight measurements for flour are:
- Ounces (oz)
- Grams (g)
- Kilograms (kg)
- Pounds (lbs)
